Deep Choco Chip Muffins

Ingredients:

  • 1 3/4 cup whole wheat flour
  • 3 items egg white(s)
  • 3/4 cup unsweetened cocoa
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup Musselman’s Natural Unsweetened Applesauce
  • 1 1/2 tsp vanilla extract
  • 1/2 cup Land O Lakes Fat-free Gourmet Half & Half
  • 1 1/2 Tbs vinegar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/4 tsp table salt
  • 1 1/2 cup water
  • 1 cup sugar
  • 3 tbls fiber sure clear mixing fiber supplement

Instructions:

Prepare 24 cupcake papers. Mix all dry ingredients together. Then mix all wet ingredients together except for 1 1/2 cups hot water. Then add both together and slowly stir in hot water. Do not over mix. Slowly stir in chocolate chips. Evenly scoop into cupcake papers and place on top of cookie sheet. Bake at 350 for about 15-20 mins. or until toothpick comes out clean. Let cool for 10 mins.
